Roast pork with sea buckthorn

  • 1 pork roast 2lb
  • 2 tablespoon olive oil
  • 1 tablespoon butter
  • 2 chopped French shallots
  • 2 minced garlic cloves
  • 1/2 cup sea buckthorn spread
  • 1/2 cup chicken broth
  • 1/2 tea spoon chopped ginger
  • 1 tea spoon strong mustard
  • Salt and pepper


  • Preheat the oven to 350°F.
  • In an ovenproof casserole dish, roast the meat on each side in the oil and butter. Reserve.
  • Add the shallots, garlic and ginger and cook for about 3 minutes.
  • Deglaze with the chicken broth. Add the spread, mustard, salt and pepper and mix well.
  • Return the roast to the pan and bake for 1 hour or until the roast is cooked to your liking.
