Roast pork with sea buckthorn

Ingredients
  

  • 1 pork roast 2lb
  • 2 vs. soup olive oil
  • 1 vs. soup butter
  • 2 chopped French shallots
  • 2 chopped garlic cloves
  • 1/2 cup sea buckthorn spread
  • 1/2 cup chicken broth
  • 1/2 vs. tsp chopped ginger
  • 1 vs. tsp strong mustard
  • Salt and pepper

Instructions
 

  • Preheat the oven to 350°F.
  • In an ovenproof casserole dish, brown the meat on all sides in oil and butter. Set aside.
  • Add the shallots, garlic and ginger and cook for about 3 minutes.
  • Deglaze with chicken broth. Add the spread, mustard, salt and pepper and mix well.
  • Return the roast to the pot and bake for 1 hour or until the roast is cooked to your liking.
